Ingredients
- 4 firm eating apples, about 180 g each
- 60 g European dried grapes
- 40 g almonds, roughly chopped
- 2 tbsp honey
- ½ tsp ground cinnamon
- 20 g butter, or 2 tbsp European extra virgin olive oil
- 100 ml water or apple juice
Method
- Preheat the oven to 180 °C (160 °C fan).
- Core each apple from the top, stopping about 1 cm short of the base so that the filling stays in place. Widen the cavity to about 2.5 cm across.
- Score a shallow line through the skin around the middle of each apple, so that the skin does not split during baking.
- Mix the dried grapes, almonds, honey and cinnamon in a bowl, then press the mixture firmly into the cavities.
- Place the apples in a baking dish in which they fit closely. Top each with a small piece of butter or drizzle with the olive oil. Pour the water into the dish around them.
- Bake for 35 to 45 minutes, basting the apples twice with the liquid from the dish. They are ready when a knife slides easily into the side and the skin has wrinkled.
- Leave to rest for 5 minutes and serve warm, with the syrup from the dish spooned over.
