Ingredients

  • 4 firm eating apples, about 180 g each
  • 60 g European dried grapes
  • 40 g almonds, roughly chopped
  • 2 tbsp honey
  • ½ tsp ground cinnamon
  • 20 g butter, or 2 tbsp European extra virgin olive oil
  • 100 ml water or apple juice

Method

  1. Preheat the oven to 180 °C (160 °C fan).
  2. Core each apple from the top, stopping about 1 cm short of the base so that the filling stays in place. Widen the cavity to about 2.5 cm across.
  3. Score a shallow line through the skin around the middle of each apple, so that the skin does not split during baking.
  4. Mix the dried grapes, almonds, honey and cinnamon in a bowl, then press the mixture firmly into the cavities.
  5. Place the apples in a baking dish in which they fit closely. Top each with a small piece of butter or drizzle with the olive oil. Pour the water into the dish around them.
  6. Bake for 35 to 45 minutes, basting the apples twice with the liquid from the dish. They are ready when a knife slides easily into the side and the skin has wrinkled.
  7. Leave to rest for 5 minutes and serve warm, with the syrup from the dish spooned over.
